I found this recipe by Michelle Tam in her book Nom Nom Paleo, and thought it was a really good idea for a side dish when you want to reduce or eliminate your carbohydrates intake. True, it is not real rice, but it looks a little like it. So when I have on my plate some protein, some vegetable that looks and acts as a vegetable, and this cauliflower “rice”, it does satisfy the psychological need for some carb side dish on my plate. And it tastes good, too.
Ingredients:
1 large head of cauliflower
1 medium onion, diced
3 tablespoons olive oil
Salt and pepper to taste
Preparation:
Heat the oil in a wide pot and sauté the onion over medium heat, until golden. Add salt and pepper.
Meanwhile, Cut the cauliflower into florets. Place half the amount in a food processor equipped with a metal blade, and pulse it gently to only mince the cauliflower.
DO NOT puree it. Transfer to a bowl and mince the other half.
Once onions are golden and spiced, add the minced cauliflower and give it a good stir.
Lower the heat to medium low, cover the pot and cook for 3-5 minutes, until cauliflower is almost soft.
